Slow Cooker Red Beans & Rice

It’s the time of year of Mardi Gras. To celebrate, you may want to have some yummy cajun dishes. One of my husband’s favorites is Red Beans and Rice. I found this recipe to make them in the slow cooker, and I really cannot wait to try it. Let us know if you try the Slow Cooker Red Beans & Rice & how you like it.

Ingredients:

  • 1 Medium Onion, Diced
  • 1 Bell Pepper, Diced
  • 3 Celery Stalks, Chopped
  • 3 Cloves Garlic, Minced
  • 1 ¼ Lb Chicken Andouille Sausage, Cut into Thin Slices
  • 1 Lb Dry Red Kidney Beans
  • 1 Tsp Salt
  • ½ Tsp Black Pepper
  • 1 Tsp Hot Sauce
  • 1 Tsp Fresh Thyme
  • 2 Bay Leaves
  • 7 Cups Water
  • 10 Cups Cooked Rice

Instructions:

Rinse the Kidney Beans and Drain.

Add All of the Ingredients, except for the Rice, to the Slow Cooker. Cook on 10 Hours on Low or 6 Hours on High.

Cook the Rice in Separate Pot.

Serve the Red Bean Mixture with a Cup of Rice.
