Steak Fajita Quesadillas
Here is a great Tasty Tuesday for Steak Fajita Quesadillas. You can play around and add whatever you like in your quesadillas.
Ingredients:
- 1 Lb Skirt Steak
- 2 Tbsp Olive Oil
- Salt
- Pepper
- 1 Tsp Chili Powder
- 1 Tsp Cumin
- 1 Onion, Sliced
- 4 Cloves of Garlic, Sliced
- 3 Bell Peppers, Sliced
- 1 Jalapeno, Sliced
- 1 Tbsp Butter
- 4 Lg Tortillas
- 2 Cups Mexican Cheese Blend
- Guacamole, Sour Cream & Salsa, if desired
Instructions:
Season the Skirt Steak with the Salt, Pepper, Chili Powder & Cumin.
Cook on High Heat for About 3 Minutes on Each Side for Medium-Rare. Let It rest for 10 Minutes and Slice into Strips.
Sauté the Onion and Garlic until Slightly Translucent. Add the Bell Peppers and Jalapeno. Cook Slightly and Add to the Steak.
In a Separate Pan, melt Butter and lay a Tortilla in the Pan. Add Cheese and the Steak Mixture. Top with Another Tortilla and Flatten.
Flip and Cook Other Side. Repeat for Each Quesadilla.
Serve.
