A tried and true Thanksgiving tradition in my household is this cornbread and andouille dressing. It will be a spicy addition to your menu and a yummy topic at your dinner table.

  1. 2 Tbsp Unsalted Butter
  2. ½ – 1 lb of Andouille Sausage, cut into ½ inch pieces
  3. 1-1/2 cups chopped yellow onions
  4. 1 cup of chopped celery
  5. 1 cup chopped green bell peppers
  6. 1 Tbsp minced garlic
  7. ½ Cup green onion
  8. 1 package of Publix cornbread (pre-made)
  9. 1 to 2 cups of chicken broth.
  10. 1 tsp Salt
  11. 1/8 tsp cayenne pepper
  12. ½ tsp black pepper
  13. 2 Tbsp of fresh cut Thyme
  14. 2 Eggs
  • Preheat the oven to 350 degrees F. Generously butter a 13×9” baking dish and set aside.
  • In a large skillet, cook the sausage until brown and the fat is rendered, about 5 minutes. Add onions, bell peppers, garlic, and cook for two minutes. Remove from the heat and transfer to a large bowl to cool.
  • With your fingers crumble the cornbread into the bowl. Add salt, green onions, thyme, pepper, cayenne (Add to taste; I always add extra), eggs, and mix well with your hands. Add chicken broth ½ cup at a time (add slowly) until mixture is moist but not mushy.
  • Transfer to prepared dish and cover with aluminum foil. Bake until heated through, about 25 minutes. Uncover and bake until golden brown, about 15 minutes.
