This recipe is full of flavor and easy to prepare. It is perfect as a side dish or as a light meal.


4 cups butternut squash cubed
4 strips of bacon roughly chopped
1 tsp kosher salt
1/4 tsp black pepper
1/2 tsp cinnamon
1/8 tsp ancho chili powder
1/2 cup pecans chopped
2 tbsp olive oil
4 tbsp honey


Preheat the oven to 400°F.

In a bowl, combine kosher salt, black pepper, cinnamon, and ancho chili powder. Mix well.

On a sheet pan with sides, place the cubed butternut squash. Add olive oil and the mixed seasonings. Toss until evenly coated.

Spread the seasoned squash evenly on the sheet pan to ensure even roasting.

Sprinkle the roughly chopped bacon on top of the squash.

Drizzle honey over the squash and bacon mixture.

Roast in the preheated oven for 25-30 minutes until the bacon is browned and the squash is fork tender.

Once cooked, remove the pan from the oven and toss in the chopped pecans. Mix well with the roasted squash and bacon.

Return the pan to the oven for an additional 5 minutes.

Remove it from the oven and let it cool slightly before serving.
