Fall Cowboy Spaghetti: A Hearty Twist on a Classic

As the air turns crisp and the days grow shorter, it’s time to bring out those comforting, flavor-packed meals that warm both the belly and the soul. Enter: Fall Cowboy Spaghetti—a bold, smoky, and slightly spicy pasta dish that’s everything you love about chili… tossed with spaghetti.

This dish is the ultimate weeknight hero—loaded with crispy bacon, ground beef, fire-roasted tomatoes, pinto beans, and cheddar cheese. It’s a Tex-Mex meets Italian mashup that’s perfect for cozy dinners, game-day gatherings, or just feeding a hungry crowd.

Ingredients

For the Cowboy Spaghetti:

  • 6 slices thick-cut bacon, chopped
  • 1 lb. ground beef
  • 4 garlic cloves, finely chopped
  • 1 jalapeño, seeded and chopped
  • 1 yellow onion, chopped
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. kosher salt, plus more for pasta water
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. black pepper
  • 1 (28 oz.) can crushed fire-roasted tomatoes
  • 1 (15 oz.) can diced fire-roasted tomatoes (with liquid)
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • 1/2 cup beef broth
  • 1 Tbsp. Worcestershire sauce
  • 1 lb. spaghetti
  • 1 cup shredded sharp cheddar cheese (about 4 oz.)
  • 2 green onions, sliced

Directions

1. Cook the Bacon

In a large Dutch oven or deep skillet, cook chopped bacon over medium heat until golden and crispy—about 5 to 7 minutes. Transfer to a paper towel-lined plate and set aside. Don’t discard those flavorful drippings!

2. Brown the Beef & Veggies

To the bacon drippings, add ground beef, chopped garlic, jalapeño, and onion. Cook for 5–7 minutes, breaking up the meat with a wooden spoon, until browned and tender. Sprinkle in chili powder, salt, cumin, oregano, and black pepper. Stir well to coat everything in those warm fall spices.

3. Build the Sauce

Add crushed tomatoes, diced tomatoes (with liquid), pinto beans, beef broth, and Worcestershire sauce. Stir to combine and bring to a boil. Reduce heat to medium-low and let it simmer uncovered for 15 minutes, letting all those bold flavors come together.

4. Cook the Spaghetti

Meanwhile, bring a large pot of salted water to a boil. Cook spaghetti according to package directions. Drain, reserving ½ cup of the pasta water for later.

5. Toss & Serve

Remove the sauce from heat. Add cooked spaghetti directly into the sauce and toss well to coat. Use reserved pasta water to loosen the sauce as needed for that perfect texture.

Top with shredded cheddar cheese, sliced green onions, and the reserved crispy bacon.

Why You’ll Love It

  • Bold flavor: Smoky bacon, spicy jalapeño, and savory ground beef are a winning combo.
  • One-pot ease: Most of the magic happens in one big Dutch oven—less mess, more comfort.
  • Perfect for fall: Hearty, cozy, and packed with ingredients that feel like sweater weather in a bowl.
  • Great for leftovers: This dish reheats beautifully and might taste even better the next day!

Tips & Variations

  • Spice level: Want more heat? Leave the seeds in the jalapeño or add red pepper flakes.
  • Make it extra cheesy: Stir a handful of shredded cheese directly into the sauce.
  • No beef? Ground turkey or chicken works great too.
  • Gluten-free? Sub in your favorite gluten-free pasta.

Serve It With…

  • Cornbread or garlic toast
  • Simple green salad
  • Pickled jalapeños for extra kick
  • A big mug of apple cider or craft beer 🍺
